French Baked Pompano

AJ and his friend Jay went out in the boat last week. This pompano “skipped” through the air and bounced off of AJ’s belly. A quick scramble and said fish was in the cooler. So much easier than fishing with a pole.

I dubbed that fish “Tasty” and went about making sure it lived up to it’s name.

The recipe is alarmingly simple and dangerously fattening.

Rinse fillets under cold water and place (skin side down) on an oiled baking rack. Preheat oven to 350° Fahrenheit.

Topping

3/4 package of cream cheese

1/2 cup of mayonnaise

1 Dollop of Sour Cream

1/2 cup of grated Parmesan Cheese

Stir until smooth and spread over fish. You may wish to season fish fist, although I didn’t.

French-Bake-Prep

Bake in oven until almost done (25 minutes for these thick fillets) and then place under the broiler until topping is golden brown. It’s that simple. Enjoy!
